Is it just a southern thing to eat black eyed peas on New Years Day for luck? I know I’ve been doing it for as long as I can remember (and sometimes only when I remember). This year I got really fancy pants and spiced up my favorite black eyed pea dip recipe. Sure I like them whole with a glob of mayo on top as much as the next guy, but these little black eyed pea taco cups are perfect for a party.
- 1 brick cream cheese
- Green onion diced
- 2 TBS Louisiana hot sauce
- Salt and pepper to taste
- Shredded cheese
- 5 Cans black eyed peas
- 2-3 TBS Garlic
- 1 TBS butter
- Cayenne pepper to taste
- Mini muffin tin
- Round cookie cutter
- Blender (Ninja, food processor)
- Large Bowl
Saute butter, chopped garlic and onions until onions are translucent.
Drain and rinse canned black eyed peas.
In a large bowl add peas, room temp cream cheese, onions, garlic and spices. I usually eyeball my spices, but let me say that I had horrible allergies when I made this batch which meant I spiced the poop out of these and I tend to like things extra spicy anyway.
I used a hand blender to make a giant pile of black eyed mush.
Use a cookie cutter slightly larger than the size of your muffin tin to make circles. Mine happen to have scalloped edges.
Microwave the tortillas for 30 seconds to make them easier to squeeze into muffin tin.
Fit tortillas into muffin tins. Cook for 10 minutes at 350. Remove from oven and add a scoop of dip into the center of each tortilla cup and heat another 5-8 minutes. Remove a 3rd time and sprinkle with cheese and chopped green onion bake until cheese is melted.
Serve these suckers hot and fresh out the kitchen’. They get soggy quick like a nacho. A little avocado on the side is aways a good idea. This is a super yummy way to get lucky in 2017, it can’t be worse than 2016 am I right. Need a Super Bowl snack, might I suggest these. Got the crafty munchies – boom.
